Easy Homemade Tortillas


I love tortillas and we really enjoy eating them with chili or making quesadillas. You can imagine my surprise when I got to the last tortilla in the bag. I'm not sure when we'll get to a store again as we're at anchor during the Coronavirus Pandemic. Cruising and living on a boat can be challenging when it comes to cooking so I wanted to find a recipe that would be easy to make and this one is super easy and delicious!

Ingredients

  • 2 cups all-purpose flour

  • 1/2 teaspoon salt

  • 3/4 cup water

  • 3 tablespoons olive oil (shortening works as well)





Directions

  • In a large bowl, combine flour and salt. Stir in water and oil. Turn onto a floured surface; knead 10-12 times, adding a little flour or water if needed to achieve a smooth dough. Let rest for 10 minutes.

  • Divide dough into 8 portions. On a lightly floured surface, roll each portion into a 7-in. circle. The circle will not be perfect.

  • Cook each tortilla over medium heat in an un-greased skillet until lightly browned, 1 minute on each side. Keep tortillas between a towel to stay warm too serve immediate our cool down and save in refrigerator for later.
