Tuna Cakes

I cooked Tuna Cakes and they turned out great. We always have can tuna on the boat. It's an easy and inexpensive staple to have in the pantry. I also always have condiments, spices and I just started making bread so now I have bread crumbs available.

This recipe is so easy in the All American Sun Oven. I prepared it and let the patties set in the refrigerator overnight and then placed them in the Sun Oven the next morning around 9:00 AM. They were ready for lunch at 11:30 PM. I served it with a beautiful and flavorful salad.



Ingredients

1 can Tuna

2 teaspoons yellow mustard

1/2 cup bread torn into small pieces

1 tablespoon lemon juice

1 tablespoon water

2 tablespoons parsley

2 tablespoons chives, green onions, or shallots

Salt and freshly ground black pepper

A couple squirts of your favorite hot sauce

1 egg

2 tablespoons extra virgin olive oil

1/2 teaspoon butter

Chopped red pepper to spice of the taste

Italian seasoning crumbs

Directions

Drain the liquid from the tuna cans

add a teaspoon of olive oil

In a medium bowl, mix together

Tuna

mustard

red pepper

bread

lemon juice

water

parsley

chives

hot sauce

salt

pepper

egg


Divide the mixture into 4 parts

With each part, form into a ball and then flatten into a patty

Dip the patties into the Italian season crumbs

Place onto wax paper lined tray and chill in the refrigerator for at least an hour. Chilling helps the patties stay together when you cook them.


Set up and preheat the Sun Oven

Cook uncovered until crispy in granite ware or a dark cooking pan. I cooked mine for 2 hours in the sun oven on a semi cloudy day. You can’t burn anything in the sun oven so no worries with time.


These can also be cooked in conventional over, toaster oven or fry them on the stove using a skillet.
