We typically only eat breakfast on the weekends because we do intermittent fasting during the weekdays. The weekends are very special to us because of this so we really love our weekend brunch. I made these Pepperoni and Cheddar Cheese Omelette Biscuits this weekend. They are so yummy!
We've been in the Bahamas for a couple of months now and they don't have the premade Grands biscuits that I love. So, I started trying different biscuit recipes. I've tried at least four different recipes including Bisquick, and this is hands down the very best recipe. It is super easy and quick to make. The texture is light and fluffy and taste so delicious.
Biscuit Recipe
Ingredients
2 Cups Flour
1 Tbls Baking Soda
2 Tsp Sugar
1/4 Tsp Salt
1 Cup Milk
1/2 Cup Butter
Directions
Mix all ingredients together and drop spoonful of biscuit mix onto greased cookie sheet. Bake until done. I'm on a boat so I have to check with a toothpick. I stick a toothpick in each biscuit and if the toothpick comes out dry, that are ready.
These biscuits are perfect with Honey or jelly, but they are devine with this yummy omelette as a breakfast sandwich.
Omelette Recipe
Ingredients
Pepperoni
Cheddar Cheese
2 Eggs
Garlic powder
Black pepper
Onion powder
Italian Seasoning
Olive Oil
Directions
Mix the eggs, garlic, pepper, onion and seasoning
Scramble the mixture
Pour a little olive oil in a skillet
Cook the pepperoni over medium heat in the skillet
Once the pepperoni starts to cook add in the egg mixture
Cover with a lid for a minute. This will make the eggs fluffy.
Flip the omelette over and recover with lid.
Place the cheddar cheese on the omelette and fold the omelette in half
Cut the biscuits in half, but then and put the Omelette on the biscuits.
