Pepperoni and Cheddar Cheese Burrito

Living on the boat, I have to keep staples that we can use at anytime. Pepperoni is one of those staples. We try to go to the grocery store at least every couple of weeks so I usually have cheddar cheese and eggs. Mike prefers sausage in his omelette but we're out so it's a Pepperoni and Cheddar Cheese Burrito today.




Ingredients

Pepperoni

Cheddar Cheese

2 Eggs

Garlic powder

Black pepper

Onion powder

Italian Seasoning

Olive Oil

Large Tortilla


Directions

Mix the eggs, garlic, pepper, onion and seasoning

Scramble the mixture

Pour a little olive oil in a skillet

Cook the pepperoni over medium heat in the skillet

One the pepperoni starts to cook add in the egg mixture

Cover with a lid for a minute. This will make the eggs fluffy.

Flip the omelette over and recover with lid.

Place the cheddar cheese on the omelette and fold the omelette in half


Burrito

Place omelette on top of the tortilla

Fold the sides in on the length sides

Fold one large side over then roll over onto the other side making a burrito

Place the burrito on a warm skillet and cover

Cook until it's golden brown

Flip burrito onto the other side and cook until golden brown

Remove from heat, cut in half and enjoy
