I tried this beautiful recipe when we were taught how to cut open cocnuts in Bimini, Bahamas.

The locals showed us how to cut them down, which ones had water and which ones had the cocnut meat in them. We found so much cocnut so I decided to try my hand at a new creation. It was perfect and I shared it with our new found friends. It is super delicious and so moist.

Ingredients
Three pineapple slices - 2 for the cake and 1 for the top
1 cup shredded coconut
1 cup white sugar
1 egg
1/4 cup melted butter
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon cinnamon
1 teaspoon punkins or apple spice ( I put in both)
1 teaspoon nutmeg
Directions
Preheat SunOoven to 325 degrees F.
Grease a loaf or a round pan.
Combine pineapple, coconut, egg, and butter together in a bowl. Leave some cocnut to sprinkle on top of cake.
Mix dry ingredients together in a separate bowl.
Stir into pineapple mixture until batter is mixed.
Pour batter greased loaf or round pan.
Place pineapple on top, cake and sprinl;e with coconut.
Bake at 350 degrees or in Sun Oven until golden brown. A toothpick inserted in the center of the bread comes out clean, 20 minutes in conventional oven or about 1 hour.
