This bean burrito taste so delicious and it has no near. It's made with field peas that give it a smoked flavor.
It's really so good and easy to make. Living on the boat, I have to make yummy food for Mike with what I have in the pantry. This recipe came about because I was thinking of something new to cook and I looked through the pantry and found that I had some field peas and corn. I thought I would throw some stuff together and make a burrito. Awesomeness! Game on! Let's throw some heat in this thing and get cooking. I used four types of cheese in this recipe because I had four types in the refrigerator. You use what you've got. If you don't have cooked rice available, cook 1/2 Cup rice for this recipe.
I mashed the peas up so that they resembled refried beans. Once they were mashed I added the other ingredients.
Ingredients
Seasoned Field Peas
Can of Corn
Rice cooked 1/2 cup
Jalapenos chopped
Cheddar Cheese
Pepper Jack Cheese
Mozzarella Cheese
Cream Cheese
Large Tortillas
Ranch Dressing
Your Favorite Hot Sauce
Directions
Mix everything together except the tortillas, hot sauce, and Ranch dressing.
Cook over the stove until the cheeses are melted.
Cover
Turn off stove
Place a tortilla in a large skillet
Pour a line of Ranch on the tortilla.
Put some of the bean mixture in the tortilla.
Cover the mixture with Ranch and hot sauce.
Fold the tortilla up into a burrito. Long length sides for in first, then left fold over and roll into the right side. Cook in the skillet on one side until golden brown and turn over into the other side and cook until golden brown.
I served Mike the burrito with red beans and rice. I saved the leftovers for another burrito day. This recipe is spicy and cheesey. It has a smoked flavor with the sweetness from the corn. It's really yummy! Let me know what you think!
