Chili and Rice



We're coming to the end of week three since we last provisioned Yinsanity and the end of week two since most countries started shutting down because of the Carona Virus. Luckily, we provisioned before any of the craziness started happening, so we were able to buy some food. However, we're in the Bahamas where everything seems to be three times more expensive than in the United States. Therefore, we didn't get as much as we did when we provisioned in Key West during December. So, I'm trying to make all that we have last longer. We love chili, so to make it go a little further, I decided to throw in a can of diced tomatoes and rice. It's was a delicious combination and I only had to use one can of chili, rather than the two I normally use. It's super easy and inexpensive. Try it and let me know what you think.



Ingredients

1/2 cup rice

1 can chili with beans

1 can diced tomatoes

Jalapenos to taste

Salt and pepper



Directions

Cool rice

Add chili, tomatoes, jalapenos, salt and pepper.

Mix together


I served my chili with homemade tortilla chips.
