Cooking On Yinsanity in Jacqui's Kitchen

Hi there! Welcome to Jacqui's Kitchen. 

We are at anchor a lot on our Catamaran, Yinsanity. I am always trying to find easy recipes that I can use with the staples in my pantry. We don't have a freezer on the boat, so I am left with us eating the produce and fresh meats as soon as we buy them, and that last about a week. However, sometime's we're at anchor for weeks, so I have find new and creative ideas for pantry foods.

 

This is great that I started this, but now it's taken on a whole new energy, because we are stuck on our boat in the Bahamas. We are here during the Corona Virus and they won't let cruisers come into the marina to restock. We can go to the grocery stores, but not by marina. We stock up a month to two at a time so we have to be in a marina to re-stock the boat. So, we're pretty much here and I'm loving it because cooking and baking has become my favorite hobby.

 

We have the All American Sun Oven which is my favorite cooking appliance because it uses the energy of the sun, so we don't need to use our resources. But, if it's windy or rainy, I cook in the galley. I have found so many delicious and easy recipes that anyone can make and I can cook them with what's in my pantry.
